Currently on the 2ww and going a bit mad so I thought I'd kill some time productively. Here are some recipes that have gone round my toddler group and I have tried them all. They are for various ages but can be adapted. Portions depend on your baby's age, I started with the annabel karmel ice cube tray and then moved up in size.
From 5 months
Chicken and apple
1 chicken breast chopped
1 apple cored and diced
1 small sweet potato
4oz courgette
16 fl oz homemade or low sodium chicken stock
tiny pinch of cinnamon
1 - Peel and dice sweet potato
2 - Bring stock to boil in saucepan
Add chopped chicken, lower heat and simmer for 10 mins
Add sweet potato and apple and simmer 10 mins
Add chopped courgette, cook 5 mins until sweet potato is fork tender, add pinch of cinnamon
Puree or chop depending on childs age.
You can cool and freeze.
Chicken and Banana (This sounds odd but is really delicious and DS still eats this one)
1 chicken breast
1 small ripe banana mashed
4 fl oz coconut milk
1 - Split chicken breast in half lengthwise
2 - Stuff it with the mashed banana
3 - Place it in a small ovenproof dish and pour coconut milk over top
4 - Bake 180 oC for 30-40 mins till chicken is cooked
5- Chop or puree, can be frozen (I serve this with brown rice and some green veg)
Apricot chicken and sweet potato
1 tbsp sunflower oil
40g chopped onions
2 chicken thigh fillets or you can use chicken breast (approx 175g) trimmed and cut into pieces
200g sweet potato peeled and chopped
8 dried apricots chopped
400ml homemade or low sodium chicken stock
1 - Heat oil in pan and saute onion 4 mins until softened
2 - Add chunks of chicken and saute for 2 mins
3 - Add sweet potato and saute 1 min
4 - Add apricots and pour over stock
5 - Bring to boil , cover and simmer for about 15 mins or until tender
Puree or chop (can be frozen)
Tuscan chicken
1 chicken breast diced
1tbsp olive oil
1 tin chopped tomatoes
1 onion chopped
2oz butternut squash chopped
pinch dried basil and pinch dried oregano or pinch mixed herbs
1 - Heat oil and saute chick for 5 mins
2 - Add tin of tomatoes and simmer 10 mins
3 - Add the veg and herbs then cover and simmer for 15 mins
Puree or chop ( I serve this with pasta)
Can be frozen
Lovely Lentils
1oz butter
4oz leeks finely sliced
1oz celery chopped
1oz red pepper chopped
2oz red lentils rinsed
1 medium carrot chopped
250g sweet potato chopped
1 bay leaf
15fl oz veg stock or water
1 - Melt butter and saute leeks for 2/3 mins
2 - Add celery, red pepper and carrot and saute for 5 mins
3 - Add lentils, saute 1 min then add sweet potato and bay leaf and pour over stock
4 - Bring to boil then reduce heat, cover and simmer for 30 mins or until veg is tender
5 - Remove bay leaf and puree or leave as is
Can be frozen
7 Months
Salmon Puree
200g carrots sliced
125g salmon fillet skinned
60 ml fresh orange juice
40g grated cheddar
knob of butter
2tbsp milk
1- Put carrots into a saucepan, cover with water, bring to boil and cook over medium heat for 20 mins
2 - Meanwhile place samlon in suitable dish, pour over orange juice and scatter over the cheese. Cover with cling film leaving and air vent and microwave on high for about 2 mins or until fish flakes easily with a fork. Alternitively cover with foil and cook in the oven for 20 mins.
3 - Flake fish with a fork, drain the carrots, mix with the butter and milk and puree with the fish and its sauce
Can be frozen
Cod with Butternut squash
Can use cheddar instead of parmesan and plaice instead of cod
85g butternut squash peeled and cubed
15g butter
30 onion finely chopped
15g plain flour
150ml milk
50ml veg stock
100g fillet cod cut into chunks
30 cheese
1 - Steam the squash for 7 mins until tender
2 - Melt butter in saucepan and saute onion for 3/4 mins
3 - Stir in flour and cook for 1 min, gradually add mile and stock and bring to boil, simmer 1 min
4 - Add steamed squash and chunks of cod and cook for 3 mins, stir in cheese
Puree or chop (can be frozen)
Salmon with Broccoli and cheese sauce
75g salmon fillet skinned
small knob butter
50g broccoli florets
15g butter
15g plain flour
200ml milk
20g gruere cheese grated, 2 tbsp parmesan grated, 2 tbsp marscapone
1 - Put salmon in suitable dish and dot with butter
2- Cover with cling file, leaving an air vent and microwave for about 1 and a half mins
3 - Meanwhile steam broccoli for 4 mins
4 - To make cheese sauce, melt butter, stir in flour and cook for 1 min, gradually whisk in milk then continue to stir over a low heat for 3 mins till sauce thickens.
5 - Take off heat and stir in parmesan and gruere til melted then stir in marscapone
6 - Flake salmon and add to cheese sauce with broccoli
pureee or chop (can be frozen)
Tasty fish and sweet potato (6 months)
275g sweet potato chopped
150g plaice fillets
2tbsp milk
generous knob butter
2 ripe tomatoes skinned, deseeded and chopped
40g cheddar grated
1 - Steam sweet potato for 10 mins til tender
2 - Meanwhile score a cross in base of tomatoes and plunge into boiling water for 30 secs. Transfer to ice cold water and skins should peel off easily.
3 - Melt knob of butter into saucepan and saute tomatoes for 2 mins till mushy
4 - Remove from heat and stir in grated cheese
5 - Put plaice in a microwave dish, add the milk and dot with butter, cover leaving vent and cook for 1 and half mins. Drain cooked fish and flake and add to tomato and cheese sauce together with cooking liquid from fish. Add cooked sweet potato and mash together.
Can be frozen
Braised Beef
20g butter
1 leek washed and sliced
4oz braising steak cut into cubes
1tbsp flour
4oz button mushrooms sliced
10oz sweet potato peeled and chopped
250ml chicken stock
juice of 1 orange
1 - Melt butter in flameproof casserole and saute leek for 4 mins
2 - Roll meat in the flour, add to leek and saute til browned
3 - Add mushrooms and saute for 1 min
4 - Add sweet potato, stock and orange juice
5 - Bring to the boil and transfer to the oven 180 oc for 1 and a half hours or until the meat is tender
Puree (Red meat didn't agree with my DS until he was about 9 or 10 months, it gave him a really sore tummy so you might want to be careful with this one)
